Clarie Kelley's Mama Mia Meatless Manicotti

Bear's Anecdote - Years ago, Bear's mother sent Jodie and Bear a box of recipes. Here is one from the box.

• 3 c. (30 oz. jar) spagetti sauce (Check out the spagetti recipe on this web site! Yum!)
• 1 c. water
• 2 c. (15 oz. container) ricotta cheese
• 2 c. (8 oz.) shredded mozzerella cheese
• 2 tblsp. chopped fresh parsley
• 1/2 tsp. salt
• 1/4 tsp. pepper
• 14 pieces (8 oz.) Ronzoni Manicotti (uncooked)

1. Heat oven to 400 degrees.
2. In sauce pan, combine spagetti sauce and water.
3. Heat to boiling while stirring.
4. Reduce heat and keep warm.
5. In bowl, stir together cheeses, parsley, salt and pepper.
6. Spoon cheese mixture into uncooked pasta tubes.
7. Pour 1 c. sauce into 13x9x2-inch baking dish.
8. Arrange pasta in a single layer on sauce.
9. Pour remaining sauce over pasta.
10. Cover with foil.
11. Bake 40 minutes or until bubbly.
12. Remove foil and bake 10 minutes longer.
