Clarie Kelley's Mama Mia Meatless Manicotti
Bear's Anecdote - Years ago, Bear's mother sent Jodie and Bear a box of recipes. Here is one from the box.
- 3 c. (30 oz. jar) spagetti sauce (Check out the spagetti recipe on this web site! Yum!)
- 1 c. water
- 2 c. (15 oz. container) ricotta cheese
- 2 c. (8 oz.) shredded mozzerella cheese
- 2 tblsp. chopped fresh parsley
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 14 pieces (8 oz.) Ronzoni Manicotti (uncooked)
- Heat oven to 400 degrees.
- In sauce pan, combine spagetti sauce and water.
- Heat to boiling while stirring.
- Reduce heat and keep warm.
- In bowl, stir together cheeses, parsley, salt and pepper.
- Spoon cheese mixture into uncooked pasta tubes.
- Pour 1 c. sauce into 13x9x2-inch baking dish.
- Arrange pasta in a single layer on sauce.
- Pour remaining sauce over pasta.
- Cover with foil.
- Bake 40 minutes or until bubbly.
- Remove foil and bake 10 minutes longer.
