Clarie Kelley's Mac 'n' Cheese
Bear's Anecdote - Years ago, Bear's mother sent Jodie and Bear a box of recipes. Here is one from the box.
- 6 oz. elbow macaroni (1-1/2 c.)
- 3 tblsp. butter or margarine
- 1/4 c. finely chopped onion
- 2 tblsp. all purpose flour
- dash pepper
- 1/2 tsp. salt
- 2 c. milk
- 2 c. cubed sharp American cheese (8 oz.)
- Cook macaroni and drain.
- In saucepan, melt butter.
- Cook onion in butter until tender but not brown.
- Blend in flour, salt and pepper.
- Add milk all at once.
- Cook and stir until thickened and bobbly. **Don't scorch**
- Add cubed cheese to sauce.
- Stir until melted.
- Stir cheese sauce into macaroni.
- Turn mixture into 1-1/2 qt. casserole.
- Bake uncovered at 350 degrees for 30 to 35 minutes.
