Farm Journal's Glazed Fruit Salad

Bear's Anecdote - A friend of mine from Huntsville, Alabama (Tim P. - It isn't good to give full names on the internet.) put me onto the Farm Journal's "Best Ever Recipes" book. He sent me a couple recipes. Here is the information on how to find the book on the web.

• 1 (1 lb. 4 oz.) can pineapple chunks, well drained.
• 1 (1 lb. 14 oz.) can fruit cocktail, well drained.
• 2 (11 oz.) cans mandarin orange segments, well drained.
• 7 or 8 bananas, sliced.
• 2 tblsp. lemon juice.
• 1 (1 lb. 6 oz.) can apricot or peach pie filling.
• Lettuce

Sounds like the ingredients for some fru-fru rum drink with the little umbrella and a wierd straw. Blech.

1. Combine pineapple chunks, fruit cocktail and mandarin oranges in a large bowl.
2. Add bananas, lemon juice and pie filling.
3. Mix gently.
4. Cover and chill several hours or over night.
5. Serve in lettuce cups.

Makes 12 servings.
