Dan "Bear" Kelley's Friend's Curried Rice Salad

Bear's Anecdote - This is another of those recipes that pop up at office pot-luck lunches.

  1. Saute rice/vermicelli with butter and curry powder, stirring constantly.
  2. Add hot water and flavor package.
  3. Heat to boiling.
  4. Cover, reduce heat and simmer for 12 minutes.
  5. Remove cover and simmer for 3 minutes until rice is tender and liquid is gone.
  6. Cool rice mixture.
  7. Drain artichoke hearts, saving marinade from one jar.
  8. Quarter artichoke hearts.
  9. Stir artichokes, olives, green pepper and onions into cooled rice mix.
  10. Mix in reserved marinade, mayonnaise and pepper.
  11. Cover and chill.
