Clarie Kelley's Lasagne
Bear's Anecdote - Years ago, Bear's mother sent Jodie and Bear a box of recipes. Here is one from the box.
Bear's mother, Clarie Kelley, doesn't care for cheese much. So, usually she will make this for us, and then eat something else. Now, I find that to be extraordinary. How could someone who never tastes it make something this delicious? Fascinating!
Sauce
1 lg. can tomato puree
2 cans tomato paste
2 c. water
1 tsp. oregano
1 tsp. sugar
1 tsp. salt
1/4 tsp. pepper
Meat Filling
2 tsp. extra virgin olive oil
1 c. minced onion
1 clove garlic, crushed (Only 1 clove?)
1-1/2 lbs. ground beef
1 tsp. salt
Noodles and cheeses
1 lb. box of lasagne noodles
1 lb. mozzarella cheese, sliced thinly
1 lb. ricotta cheese
4 oz. grated romano cheese
Preparation directions
Mix the sauce ingredients in a large kettle.
Start simmering sauce.
Saute onion in olive oil and garlic until golden.
Lightly brown ground beef in onion and garlic.
Add meat to sauce mixture.
Simmer sauce for about 2 hrs until it thickens.
Cook lasagne noodles to package directions.
Drain, rinse and dry noodles.
Assembly directions
Spoon one layer of sauce into large baking dish
Add a layer of noodles, lengthwise
Add a layer of mozzarella
Add a layer of ricotta
Add a layer of noodles, crosswise
Add a layer of sauce
Add a layer of mozzarella
Add a layer of ricotta
Add a layer of noodles, lengthwise
Add a layer of sauce
Sprinkle with grated romano
Bake at 375 degrees for 30 minutes
