Farm Journal's Maine Chicken Pie

Bear's Anecdote - A friend of mine from Huntsville, Alabama (Tim P. - It isn't good to give full names on the internet.) put me onto the Farm Journal's "Best Ever Recipes" book. He sent me a couple recipes. Here is the information on how to find the book on the web.

Farm Journal's Best-Ever Recipes, by Elise W Manning Publisher: Philadelphia : Countryside Press ; Garden City, N.Y. : distributed to the trade by Doubleday, Copyright 1977. ISBN: 0385129661 : 9780385129664 OCLC: 2917780

  1. Place chicken, onion, carrot, celery, salt and water in Dutch oven.
  2. Simmer, covered, 3 to 3-1/2 hours or until tender.
  3. Remove chicken from broth.
  4. Reserve 3-1/2 c. broth.
  5. Cool chicken.
  6. Remove meat from chicken bones, and cut up meat.
  7. Discard bones.
  8. In small jar, combine flour, onion salt, celery salt and pepper.
  9. Add 1/2 c. reserved broth to jar.
  10. Cover jar and shake until mix is smooth.
  11. Heat remaining 3 c. broth in Dutch oven to boiling.
  12. Add flour mixture, stirring constantly.
  13. Cook until thickened.
  14. Add food color. (That's just WRONG!)
  15. Add chicken and heat.
  16. Pour mixture into pastry-lined pie plate.
  17. Cover with pastry, seal and flute.
  18. Cut slits.
  19. Bake at 400 degrees for 45 minutes or until golden brown.

Makes 6 to 8 servings.
