Bear's Anecdote - A friend of mine from Huntsville, Alabama (Tim P. - It isn't good to give full names on the internet.) put me onto the Farm Journal's "Best Ever Recipes" book. He sent me a couple recipes. Here is the information on how to find the book on the web.

1 (5 lb.) stewing chicken.
1 small onion.
1 whole carrot.
1 stalk celery, cut up.
2 tsp. salt.
1-1/2 qts. water.
1/2 c. flour.
1/2 tsp. onion salt.
1/2 tsp. celery salt.
1/8 tsp. pepper.
2 or 3 drops yellow food color.
Pastry for 2-crust 9-inch pie.
Place chicken, onion, carrot, celery, salt and water in Dutch oven.
Simmer, covered, 3 to 3-1/2 hours or until tender.
Remove chicken from broth.
Reserve 3-1/2 c. broth.
Cool chicken.
Remove meat from chicken bones, and cut up meat.
Discard bones.
In small jar, combine flour, onion salt, celery salt and pepper.
Add 1/2 c. reserved broth to jar.
Cover jar and shake until mix is smooth.
Heat remaining 3 c. broth in Dutch oven to boiling.
Add flour mixture, stirring constantly.
Cook until thickened.
Add food color. (That's just WRONG!)
Add chicken and heat.
Pour mixture into pastry-lined pie plate.
Cover with pastry, seal and flute.
Cut slits.
Bake at 400 degrees for 45 minutes or until golden brown.
