Farm Journal's Crusty Fried Chicken

Why am I suddenly thinking of "The Simpsons?"

  1. Wipe chicken pieces with damp paper towels.
  2. Combine salad dressing mix, flour and salt in small bowl.
  3. Add lemon juice and butter, and mix to smooth paste.
  4. Brush chicken on all sides with paste.
  5. Stack chicken in bowl and cover.
  6. Refrigerate over night.
  7. About 1-1/2 hours before serving, heat 1/4 to 1/2-inch oil in large skillet or Dutch oven.
  8. Dip chicken in milk, then coat well with pancake mix.
  9. Shake off exess pancake mix.
  10. Lightly brown chicken on all sides in hot oil.
  11. As chicken browns, place in shallow baking pan, one layer deep.
  12. Spoon half of remaining dipping milk over chicken.
  13. Cover with lid or aluminum foil.
  14. Bake in 375 degree oven 30 minutes.
  15. Remove lid.
  16. Baste chicken with remaining dipping milk.
  17. Bake 20 to 30 minutes more until tender.

Makes 8 servings.
