Jodie and Dan "Bear" Kelley's Breakfast Potato Bake

Bear's Anecdote - Jodie and I learned about this while we lived in Texas. One of the few good things we brought with us from Texas was a love of spicy foods. The original recipe (given below) was good, but it really became excellent with Jodie added a few slices of jalapeno (noted at the bottom). A few slices of jalapeno go a LONG way.

(Can also be a side dish for dinner)

  1. Mix everything together and place in 8x8 or 9x9 baking dish.
  2. Bake at 350 degrees for 45 minutes until the top is nicely browned.
  3. Cutting back on the butter makes for a less appetizing, drier meal. Adding more butter seems to make for a richer meal.

Bear's note: Add some sliced, seeded jalapeno peppers to the bottom of the baking dish. As the mix bakes, the steam from the jalapenos permeates through the whole thing. Go easy on the Jalapenos if you're not used to them or if you have guests, because the jalapeno flavor gets all through everything in the dish.

This stuff is even better reheated... if it survives that long.
